Moray Eels : Ise Shima, Mie Prefecuture
Fisherman Takamasa Ishikawa, from the Ise-Shima region of eastern Mie Prefecture,
is taking on the challenge of revolutionizing Japanese food customs,
and creating new value by fusing an underutilized fish, the moray eels, with Spain.
